Hákarl is a Greenland shark (also known as sleeper shark) that is buried in a pit for 4-6 weeks until all that remains is its toxic liver. 

Then the liver—and only the liver—is removed and dried, usually by hanging it in seaweed or burlap sacks in cold storage for about six months. Once dried, hákarl can be stored without refrigeration indefinitely.
