You will need the following; A can of full-fat coconut milk, heavy whipping cream, or heavy cream.

  • Melt the can in a saucepan on low heat, stirring as needed 
  • Remove from heat and stir in erythritol (or your preferred sweetener).
  • If you want it thinner, add more erythritol until desired thickness is reached. 
  • Stir until all of the lumps are gone. Pour into mason jars and place in the fridge for at least 12 hours.

It is beyond easy to make and doesn’t require any cooking. You need three ingredients: cream cheese, heavy cream, and sweetener.

The first step is to place the heavy cream in a bowl with sweetener (I like using either stevia or monk fruit) until the mixture becomes whipped.

Next, you will want to add the softened cream cheese and whisk until it is smooth. Pour the mixture into either a baking dish or individual cups.

Add the wet mixture to the dry and mix well. The dough should hold together when you squeeze it between your fingers.

Just be sure to let them sit on the counter for about 20 minutes before serving so they can soften up enough to eat easily.

7. Sugar Free Rockmelon and Yogurt sorbet

If you’re looking for a sugar free Christmas dessert that’s both festive and indulgent, this rockmelon and yogurt sorbet are sure to delight.

Raw almonds, pitted dates, cinnamon, vanilla extract, fresh cherries (pitted), and coconut oil. Place the almonds into your food processor and pulse until they are finely chopped.

Add the dates and process until they form a sticky ball. Add in the cinnamon and vanilla extract, then add one tablespoon of water at a time as needed to help moisten the mixture.

Spread evenly over an 8-baking pan lined with parchment paper and press down firmly until it is about an inch thick.

This recipe can be made up to 3 days in advance and is super easy to make. Bake it up and enjoy!

Start by preheating the oven to 350 degrees F. Grease an 8×4 inch loaf pan with cooking oil or line it with parchment paper, leaving some of the parchment hanging over the sides for easy removal from the pan. 

In a large bowl, mash overripe bananas until almost smooth. Add in almond butter and eggs, stirring until fully combined. Add in vanilla extract and stir until just combined.

  • Vanilla extract

In another large bowl, whip the mascarpone until smooth and creamy, then add the honey or maple syrup if using. Mix half the mascarpone mixture into the peanut butter mixture until incorporated evenly.

  • Add salt, vanilla extract, and nuts and mix well. 
  • Divide dough into 1-inch balls and roll them in cocoa powder to coat thoroughly; place the balls on ungreased baking sheets about 3 inches apart (they will spread). 
  • Bake at 350 degrees F for 8 minutes or until firm but not too hard to touch.
  • Cool before removing from pans with a metal spatula (chocolate can be brittle). Makes 20 truffles.

The dough is made from peanut butter (of course), vanilla extract, and honey or maple syrup. You can also add in some chocolate chips if you want.

You just mix all the ingredients and then roll them into little balls. They taste like cookie dough straight out of the oven. So good!!
